Middle School Cafeteria Earns Sustainable Pittsburgh Restaurant Gold Designation

Middle School CafeteriaShady Side Academy's Middle School cafeteria, which is run by Metz Culinary Management, recently earned the Gold level designation as a Sustainable Pittsburgh Restaurant. A Sustainable Pittsburgh Restaurant demonstrates commitment to managing the social and environmental impacts of its operations.

Administered by Sustainable Pittsburgh, Sustainable Pittsburgh Restaurant is a performance program that recognizes restaurants and food service establishments for working towards building vibrant communities and supporting environmentally responsible practices.

Developed with regional experts and industry insights, the Sustainable Pittsburgh Restaurant assessment consists of 149 sustainable actions from seven broad areas of focus: general, waste reduction, water conservation, energy efficiency, people, responsible sourcing, and nutrition. Points are earned for each "yes" response, indicating that selected practices are in place. Each affirmative response is to be backed up with a self-declared statement of validity by the restaurant in order to demonstrate satisfaction of the action. Level of achievement is based on total points accumulated from all selected actions. Restaurants are recognized with one of four levels of designation: Bronze, Silver, Gold or Platinum.

In earning the Gold designation, the SSA Middle School cafeteria is acknowledged for its efforts in addressing areas such as energy efficiency, water use, healthy dining, sourcing responsibly, being active in the community, and providing a workplace that fosters employee growth. Metz Culinary Management, Shady Side Academy's food services partner, is a family-driven company that collaborates with its clients to deliver restaurant-inspired hospitality to each and every guest. Cindy Wise is the Metz general manager for SSA.

To date, SSA and Metz have not yet pursued earning the SPR designation for the cafeterias at the Country Day, Junior and Senior School campuses.
